Ingredients:
1 cup fresh or frozen corn
1 cup barley
1 teaspoon Italian seasoning
2 tablespoons finely chopped parsley½ teaspoon salt
Juice of ½ lemon
2 tablespoons olive oil
Method:
- Wash and soak Barley for one hour.
- Drain and cook over stove till tender.
- Wash in running water in a colander and let dry.
- On another stovetop, boil corn for 7-8 minutes till tender.
- Heat a non stick skillet on medium high flame and add corn.
- Add the 2 tablespoons oil.
- Roast the corn till brown marks show, raising the flame if needed.
- Add in the boiled barley and continue roasting and mixing.
- Add salt and Italian seasoning, mixing them into the corn and barley till the mix looks nicely blended.
- Remove the pan from the stove and add the juice of half the lemon and the parsley. Mix.
- Take out in a serving bowl.
